Scotch Eggs

8 ounces extra lean ground turkey
2 medium size green onions finely chopped
1/2 teaspoon dried rosemary leaves
1/8 teaspoon salt
4 hard cooked large eggs, shells removed
1/3 cup whole wheat bread crumbs

In a medium size bowl mix the ground turkey, green onions, rosemary and salt. Shape into 4 patties, each about 4 inches in diameter. Wrap a meat patty around each egg, completely encasing the egg. Place eggs on a plate. Cover and refrigerated for 2 to 4 hours

Preheat oven to 400 F. Roll eggs in bread crumbs until coated. Arrange eggs in a lightly greased shallow baking pan. Bake for 30 minutes or until meat is no longer pink.

May serve with dipping sauce of your choice.
